A BREATH OF FRESH HEIR
This weekend marks a moment in history, and although King Charles has been King since late last year upon the death of late Queen Elizabeth, the official crowning ceremony is now here. The three day celebration calls for a bank holiday. Our second bank holiday of the month. Aren’t we lucky?
This blog entry is here to serve as inspiration, see this as a guide to having a cracking Coronation weekend and you can’t go far wrong!
If an afternoon tea or treats fit for a king are on this weekends’ agenda, boy do we have something for you! A delicious take on a British classic: the scone. This recipe was created by our Marketing Exec, Kodie and it goes as follows:
Blueberry Muffin Scones
You will need:
- 100g softened unsalted butter
- 140g golden caster sugar
- 2 large eggs
- 140g natural yogurt
- 2 tbsp milk
- 2 tbsp baking powder
- 1tbsp bicarbonate of soda
- 250g plain flour
- Blueberry puree (you can use frozen or fresh blueberries instead)
- Clotted cream
- Fruit compote of your choice (raspberry is recommended)
- A handful of strawberries
- A handful of fresh blueberries
- Icing sugar
Method:
STEP 1
• Heat oven to 200C/180C fan/gas 6 and line a baking dish with grease proof paper. Beat the butter and caster sugar together until pale and fluffy. Add the eggs and beat in for 1 min, then mix in the yogurt, vanilla extract, and milk. Combine the flour, baking powder and bicarb in a bowl with ¼ tsp fine salt, then tip this into the wet ingredients and stir in. Finally, fold in the blueberry puree and create swirls with a cocktail stick.
STEP 2
Bake for 5 mins, then reduce oven to 180C/160C fan/gas 4 and bake for 15-18 mins more until risen and golden, and a knife inserted into the centre comes out clean.
STEP 3
After it has cooled, take a glass or jar to press shapes out of the blueberry cake this should leave behind scone shaped pieces. Cut them in half, fill with clotted cream and compote, top with a dot of clotted cream and the remaining strawberries and blueberries. Lastly, sprinkle with icing sugar and enjoy!

Corrie Bobs Cocktail
This cocktail is a British classic and what better excuse than what Gen Z has been referring to as the ‘Kings Cozzie’, to splash out with a glass of fruity Pimms.
You will need:
- Cucumber
- Mint leaves
- Strawberries
- An orange
- Pimm’s
- Lemonade
No instructions needed really, chop up the fruits and add together in a carafe with ice, 1 parts Pimm’s, 3 parts lemonade: enjoy!
Maybe your headed out for a celebration and unsure what to wear? Approaching May in the UK is a minefield because of the unpredictable weather changes but a piece that seems to be doing the rounds rain, hail, or shine, is the maxi skirt. Layered up with a knitted sweater and trainers for a relaxed look, or styled with a heel and clutch combo, the versatile maxi skirt is bang on trend for this weekend. Denim, monochrome or a bold pattern…well that’s up to you!

- Create some paper chains, crowns or bunting to keep up with the royal celebrations, why not get the kids involved too?
- Organise a street or garden party with the neighbours
- Host an afternoon tea for loved ones
- Enjoy the bank holiday by taking time out for yourself: read a book, write down things you are grateful for or take a long soak in the bath.
